Duck fat can be used in solid or melted form, just like butter. In fact, duck fat can easily be used in the place of butter in almost any recipe.
When using duck fat for deep-frying, gently melt the solid fat over medium-high heat until completely liquefied, then raise the temperature to high to bring it up to proper frying temperature.
