HOW TO: Prepare duck breast fillets

Frying Pan

  • Heat frying pan to a medium heat, and preheat oven to 200C.
  • Carefully score the skin of the breast with a sharp knife.
  • When the pan is hot, place the breasts skin side down using no oil and cook for 3-4 min until the skin is golden brown.
  • Turn over and cook for another minute and then place into pre-heated oven for 8 min.
  • When cooked, remove from the pan and rest the breasts for about 5 min. This will allow the juices to settle.
  • Lightly season with a little salt and freshly ground pepper or enjoy with a sauce of your choice.

Braai

  • Prepare braai.
  • Carefully score the skin of the breast with a sharp knife.
  • Place the breasts skin side down on grid 30cm above the heat and cook for 3 – 4 min until the skin begins to brown.
  • Turn over and cook for 10 – 12 min depending on the size, until the meat is cooked to your liking. Turn over and crisp the skin for another minute.
  • When cooked, allow to rest for a few minutes before slicing.
